Ground Beef Recipes Quick
Ground beef recipes quick presents you with a quick and easy recipe that also tastes delicious. Similar to a traditional Shepard’s Pie, but with a Mexican twist.

Ingredients

  • 1 pound of lean ground beef
  • 1 1/2 cups of Mexican blend cheese (grated)
  • 3/4 cup of yellow cornmeal
  • 1 can of whole kernel corn (drained)
  • 1 cup of onion (chopped)
  • 1 large green bell pepper (chopped)
  • 1 large can of tomato sauce (15 ounces)
  • 1 large can of tomatoes (cut up)
  • 1 small can of sliced ripe olives (4 ounces)
  • 2 cloves of garlic (minced)
  • 1 tablespoon of sugar
  • 2 cups of cold water
  • 1/2 teaspoons of chili powder
  • 1 tablespoon of butter or margarine
  • Salt and pepper (to taste)

Instructions

  1. To begin on this ground beef recipe, brown the ground beef with onion and green pepper and then drain it well. Add the tomatoes, tomato sauce, corn, garlic, olives, black pepper, chili powder, sugar and salt. Whenever I’m in the mood for mushrooms I always add some at this stage. Heat the mixture until it boils. Thereafter, reduce the heat and allow it to simmer for about 20 minutes while uncovered. I normally check to confirm that it is thickened. Add the cheese and stir it in until it melts and then set aside the filling.
  2. Mix together the cornmeal, chili powder, water, and a little salt in a saucepan. Cook this over medium heat until thick – ensure that you stir it constantly. Then stir in your butter.
  3. Pour out half of this mixture into a baking dish of about 12 x 8 inches and spread it evenly. Spoon the filling over the bottom crust and the remaining cornmeal mixture thereafter over the filling. Bake for about 45 minutes at 375°F.
  4. Garnish with parsley and then serve hot.

Quick Notes

For added flavor, I normally sprinkle half a cup of cheese over the crust about five minutes before the casserole is done.
